BLT Bites

Small tomatoes (seeds scooped out)
Mix together:
Romaine Lettuce (finely chopped)
Bacon (crisp and crumbled)
Mayonnaise
Spicy Salsa
Season to taste.
Stuff into tomatoes.



Key Lime Cheesecake

8 oz Cream cheese (room temperature)
1  14oz can sweetened condensed milk
3 egg yolks
5oz key lime juice

Mix all of the above, and pour into premade shortbread crust (or graham cracker crust)
Bake 20 minutes at 350
Refrigerate 6 hours
Enjoy!

Honey Bombay Chicken

1 pound chicken thighs (skinless and boneless)

Marinade: (adjust ratio according to your taste)
1/2 cup Honey
1/2 cup Dijon mustard
2 Tbsp Curry powder
*Mix marinade, and reserve 1/4 cup.

Pour marinade over chicken and refrigerate overnight, or at least 1 hour
Bake at 375 for 45 minutes or until cooked.
Drain any liquids
Pour reserved marinade over cooked chicken and place under broiler for a few minutes until browned. 

Triple Coconut Caribbean Panna Cotta

1Tbsp powdered unflavored Gelatin (Knox brand)
1 can Coco Lopez (15oz)
1 can Coconut Milk  (13.5oz)
1 3/4 c. Cream
1/4 c. Malibu Coconut Rum
1/4 c. Confectioners Sugar

Sprinkle gelatin over 3 Tbsp cool water in a small bowl.

In a medium saucepan, combine Coco Lopez and coconut milk over medium heat until it starts to bubble slightly.
Remove from heat, and add gelatin stirring until dissolved.

Rest pan on a large bowl filled with ice to cool mixture.  Stir.  When it begins to thicken, add confectioners sugar, cream and rum.
Pour into small ramekins and chill for several hours until set.


Frozen Key Lime Pie

1 tub Cool Whip - softened
1 can Sweetened condensed milk
1/2 to 3/4 cup of bottled Key lime juice (add to taste)
1 prepared Graham cracker crust

In a large bowl, combine Key lime juice and Sweetened condensed milk and stir until smooth.  Gently fold in the Cool Whip.  Add additional Lime juice to taste.  Pour into pie shell and freeze.  Serve frozen.  Enjoy!
